How the calculator works

The calculator takes three quick inputs — roughly how many covers you do, your average ticket, and how often your cash count and till disagree at the end of the day. It multiplies covers by average ticket to estimate your weekly takings, then applies a small percentage "leak rate" to that figure. The more often you see end-of-day variance, the higher the leak rate it assumes. The result is a 30-second estimate of money that quietly slips away through slow service, voided orders, refunds, missed upsells and unreconciled cash — not an audit of your accounts.

What the leak-rate basis means

The leak rate is grounded in a stock-and-cash variance band of roughly 1.5% to 4.5% of takings, which is a commonly cited range for how much value an unreconciled hospitality business loses to shrinkage, wastage and till discrepancies. A venue that reconciles tightly sits near the bottom of that band; one where the drawer rarely matches the till sits near the top. These percentages are an illustrative planning basis, not a measurement of your specific site — every venue's real number depends on its menu, controls and staff.
